Extra virgin olive oil

Since the Roman Empire, the olive tree has been the undisputed protagonist in the Tuscan landscape. 

Even today, many families own their own olive grove, demonstrating the rooting of the olive growing tradition in the history of these lands.

We produce EVO oils in small quantities, accommodating the annual variability dependent on the weather conditions in the various phenological stages of the plant, as well as on the care of the olive grower.

We carefully choose the mills in which to produce the oil, we respect good olive harvesting and conservation practices for the time necessary before pressing and the best time for harvesting

All stages of the production process are carried out under vacuum, protecting the olive paste from contact with oxygen and preserving the precious chemical molecules that make oil a valuable ally in maintaining health. Chemical analyses demonstrate its high polyphenol content. Cold-pressed and filtered. Medium fruity flavor, with a good lingering bitterness and spiciness. Recommended for bruschetta, pasta, fish, and meat.

Sold in 0.5 l bottles, every year the oil produced is subjected to chemical-physical and sensorial analyzes by the Consortium of Tuscan PGI oil, to verify compliance with the parameters set out in the production specifications. Cold extracted and filtered. Medium fruity taste, with good persistence of bitterness and spiciness. Recommended for bruschetta, pasta, meat.

Sold in 0.75-liter “Marasca” bottles, it has a light fruity flavor with a subtle bitterness and spiciness. Cold-pressed and filtered. Recommended for delicate foods, vegetables, salads, and fish.

Wildflower honey, chestnut, the spring one

Mechanically extracted from the supers in the company laboratory, it is matured before moving on to packaging, without the aid of heat treatments.
All our apiaries are sedentary, we do not do nomadism.

Extracted at the end of the summer season, it represents the identity card of the territory. Produced by bees by foraging for floral species present in the collection area, both containing nectar and pollen only.

Produced in areas where there is a high percentage of chestnut trees, this honey presents itself as an excellent compromise for those who love honey, but don’t particularly like overly sweet flavours.

Extracted at the end of the spring season, it is a honey rich in acacia, although it is still a multifloral honey

Fresh plant extracts by steam distillation from plants grown on the farm.
The harvest is done manually, in the balsamic period of the plant and the distillation is carried out the same day or at most in the 24 hours following the harvest.
